Steps

  1. Measure out 100g of millet and place it in a bowl. Rinse it briefly with water (stir with your hand, pour the water out, only to remove floating dust. Do not scrub it!!!)
  2. Bring the water to a boil. It must boil!!!
  3. When the water is boiling, pour the millet into the pot. (This is a very important step that is easily overlooked.)
  4. Stir to prevent the millet from sticking to the bottom of the pot, and continue to simmer with high heat for 6-10 minutes. Pay attention to stir a few times in between.
  5. Change to medium heat and simmer with a cracked lid for 15-20 minutes. The lid must be slightly ajar; you must not let the millet oil escape! Continue stirring a few times in the middle to prevent scorching the bottom of the pot.

Millet congee is a common home-style porridge in Northern China. It has a silky texture, a rich aroma, and the millet oil extracted from it is particularly good for the stomach. It is rich in protein, fat, carbohydrates, and carotene, and has one of the highest vitamin B1 contents among grains, making it easy to digest and absorb. The preparation is very simple and beginners can easily master it. It takes about 30-35 minutes from boiling the water to serving.

* This is for regular pot cooking. It produces the best taste. A pressure cooker or rice cooker is convenient, but the effect is compromised; the water amount should be reduced appropriately. Generally: 100g millet + 1800g water.
* Millet only needs to be rinsed with water to remove floating dust. Do not over-wash it, or you will lose the millet oil.
* Remember that millet must be added to the pot when the water boils.
* I don't like adding alkali; I prefer the original flavor of the millet.
