Steps

  1. Wash the pork ribs and cut them into small pieces measuring approximately 3 ± 2 x 4 ± 2 cm (if you don't have a knife to chop the ribs, you can ask the butcher for help).
  2. Place 700ml of cold water and the pork ribs in a wok/cooking pot. Heat until boiling, turn off the heat, and remove the ribs.
  3. Cut the bitter melon in half lengthwise and remove the seeds and the white pith inside. Slice the bitter melon into strips measuring approximately 0.5 ± 0.3 cm and wash them.
  4. Cook in a soup pot.
  5. Pour 1100ml of water into the soup pot together with the ribs. Bring to a boil over high heat.
  6. Once the water boils, add the bitter melon and dried shrimp. Reduce the heat to low and cook for 120~240 minutes. After 120 minutes, you can scoop out a piece of meat to taste; if the meat can be easily separated from the bone, you can turn off the heat.
  7. Season with salt and white pepper when serving. Recommended amounts: 0.3~0.6g salt and 0.1~0.5g white pepper per 250ml serving.
  8. Cook in an Electric Pressure Cooker.
  9. Pour 1000ml of water and the pork ribs, dried shrimp and bitter melon into the cooker.
  10. Select the Soup Stewing function and let it cook (usually about 45 minutes of pressurized cooking).
  11. Serve, seasoning with salt and pepper just like the pot cooking method.
