Steps

  1. Clean the lobsters thoroughly and remove the intestinal veins. Cut scallions into 2cm sections and mince the ginger and garlic.
  2. Heat the oil until it is slightly warm, then add the bay leaves, star anise, cinnamon, green Sichuan peppercorns, Sichuan peppercorns, and bullet-point chili peppers.
  3. Once the spices release their aroma, add the scallions, ginger, and garlic.
  4. After stir-frying the scallions, ginger, and garlic until fragrant, add the Pixian bean paste and cooking soybean paste, and stir-fry until red oil is rendered.
  5. Add the lobsters and stir-fry until they change color.
  6. Add beer. Once the beer boils, add the light soy sauce and salt.
  7. When the lobsters are fully cooked, remove from heat and serve.
