Ingredients
- Blue swimmer crab (also known: Mud crab, Meat crab)

Steps
- After removing the crab lid, cut the crab in half crosswise. Gently crack the crab claws with the back of a knife. Dip the cut surfaces and crab claws in cornstarch, not too much. Sprinkle 5g of cornstarch into the crab lid to cover the crab roe and set aside.
- Chop the onion into small pieces and set aside.
- Chop the garlic and set aside.
- Boil a kettle of water and set aside.
- Heat a pan over fire and pour in about 20ml of cooking oil. Wait 10 seconds for the oil temperature to rise.
- Place the crabs in the pan with the cut side facing down. Fry for 20 seconds. This step mainly seals the crab roe and meat. Then flip them over and fry for 10 seconds on each side. After frying, remove the crabs and set aside.
- Place the crab lid in the pan. Use a spoon to scoop hot oil from the pan and pour it over the crab lid to sear the crab roe inside. Fry for 20 seconds, then remove and set aside.
- Do not wash the pan. Pour in 10ml of cooking oil again and turn the heat to high until the oil temperature rises to just slightly smoking. Add the chopped garlic and onion pieces, and stir-fry for 10 seconds.
- Put the curry cubes in the pan to stir and melt (10 seconds), then add the fried crabs, and stir to mix evenly.
- Pour in 300ml of boiling water and simmer for 3 minutes.
- After simmering, pour in the coconut cream and beaten egg white. Turn off the heat, and keep stirring until the sauce thickens.
- Serve.
