Steps

  1. Whisk eggs to form an egg wash and set aside.
  2. Prepare the sauce: (20g light soy sauce + 10g oyster sauce + 5g dark soy sauce + 10g white sugar + 10g cornstarch + 200ml water).
  3. Slice the old tofu. (Note: Suggested slice count ~5 per person, thickness 1.2cm).
  4. Pour cornstarch into a shallow plate. Coat the tofu slices in the starch first, then coat them in the egg wash and set aside.
  5. Heat the pan and add 18ml of cooking oil. Wait for 10 seconds to allow the oil temperature to rise.
  6. Place the egg-coated tofu slices evenly in the pan to cover the bottom. Cook over low heat until golden brown, then flip.
  7. Once both sides are golden brown, pour in the sauce to coat the tofu. Boil over high heat for 3 minutes until the sauce thickens.
  8. Turn off the heat.
