Steps
- Use a spatula to break the rice into small chunks in advance.
- Slice or cube the ham, carrot, cucumber, etc., according to your needs.
- If you have cooked meat at home, have it ready for added flavor.
- Separate the egg white and egg yolk, crack them into two large bowls, and beat each until fully blended. **Note**, do not add salt at this step.
- Heat the wok over high heat. Once it emits smoke, add oil, then add the egg white. Once it sets (coagulates), remove and set aside.
- If there is enough oil, add the egg yolk directly. If there isn't enough oil, add a little more oil and wait for it to heat up again over high heat.
- Once the remaining liquid sets, turn the heat down to medium-low. Add the ham, cooked meat, carrot, cucumber, and other prepared ingredients. Stir-fry for 10 seconds (until they become aromatic).
- Pour the egg white back into the pan and stir-fry for another 5 seconds. Quickly pour in the rice and turn the heat up to stir-fry vigorously; the goal is for every grain of rice to be coated in egg.
- While stir-frying, break up any clumps of rice. This process takes a while; stir until the rice is fully broken up and evenly mixed.
- Turn the heat to low. Add salt, white pepper, and light soy sauce.
- Continue mixing until you see some rice 'jumping' (bouncing) in the pan; this indicates it's about done.
- Finally, add the chopped scallions and stir-fry for another 10 seconds.
- Turn off the heat and bowl the fried rice.
