Ingredients

• Note: Due to the complexity of preparing fresh river snails and sour bamboo shoots at home, this recipe is based on a packaged Luosifen kit which typically contains:
• Ingredients: 1 pack of Luosifen (includes)
• Rice noodles
• River snail meat pack (may be included inside the seasoning pack)
• Soup stock pack
• Ingredient pack (Sour bamboo shoots, peanuts, bean curd sheet, wood ear mushroom, etc.)
• Seasoning pack (vinegar, chili oil, etc.)
• Equipment:
• Pot
• Induction cooker/Stove
• A pair of chopsticks

Steps

1. Add water to the pot and bring it to a boil.
2. Add the rice noodles and boil for 3-5 minutes. Stir with chopsticks occasionally to prevent them from sticking together.
3. Add the soup stock pack and season to taste.
4. Add a portion of the ingredient packs (such as wood ear mushrooms, peanuts, and river snail meat). These ingredients need to cook for a while to absorb the flavor.
5. Add the seasoning packs and season to taste.
6. Stir, then remove the noodles and place them in a bowl.
7. Add the remaining ingredient packs (such as sour bamboo shoots and bean curd sheets). Note that these ingredients should not be soaked in the broth for too long.
8. Enjoy your meal!

Notes

Luosifen, a specialty snack from Liuzhou, Guangxi, features a fresh, rich broth with a sour and spicy flavor that is refreshing and appetizing. The noodles are soft, smooth, and chewy. The taste blends the umami of the snail broth, the unique fermented flavor of the sour bamboo shoots, and the kick of the chili oil, creating distinct layers.

As a staple, the rice noodles provide plenty of carbohydrates, the snail meat and ingredients contribute some protein, while the sour bamboo shoots help stimulate appetite and aid digestion. This dish involves simple operations; just boil the noodles and season in order, making it very beginner-friendly. From boiling water to serving, it takes about ten minutes to get it on the table, making it suitable for a quick meal.
