Steps

  1. Trim the heads, tails, sharp spines, antennae, and legs of the shrimp. Use scissors to slit the shrimp's back open and remove the digestive tract (vein).

  3. Wash the coriander and cut into sections for later use.

  7. While the sauce is reducing slightly, stir-fry the coriander briefly for two turns, then remove the dish from the heat.
