Steps

  1. Place the pork in a bowl and season with cooking wine, salt, light soy sauce, cornstarch, and white pepper. Set aside.
  2. Heat a wok without oil. Add the pickled bamboo shoots and stir-fry until most of the water is evaporated. Leave a space in the center of the stir-fried bamboo shoots.
  3. Add 10ml - 15ml of cooking oil, along with all the garlic, chopped chili, and salted fermented black beans, into the center of the wok. Push everything into the center and stir-fry to release the fragrance.
  4. Add the seasoned pork into the wok and continue stirring in 10ml of light soy sauce for one minute.
  5. Add 5ml of rice vinegar, 10ml of light soy sauce, and 450ml of water. Bring to a boil.
  6. Once the water boils, add the pre-soaked rice noodles and continue to cook for 3 minutes before serving in a bowl.
