Ingredients

  • Oven
  • Rack
  • Aluminum foil
  • Drumsticks (Pistola legs)
  • New Orleans BBQ Chicken Wings Seasoning (Recommended brand: McCormick Green Label)
  • Soy Sauce Marinade (Recommended brand: HiYake, "Thin Salt Rice Noodle Soy Sauce Marinade")

Steps

  1. Thaw the drumsticks and wash them.
  2. Make slashes on the drumsticks: In a parallel line along the "shaft" of each drumstick, use a knife to cut 4-6 times, cutting as deep as possible.
  3. Take a pot, add **15 - 20 g of New Orleans BBQ Chicken Wings Seasoning powder, 5 g of salt, and ≥30 mL of water**.
  4. Place the slashed drumsticks into the pot and mix thoroughly.
  5. Place the entire pot in the refrigerator **refrigerate for 2 - 4 hours**; the longer it takes, the more flavorful it becomes.
  6. Place a sheet of aluminum foil on the baking rack. Take out the drumsticks and place them skin-side down (do not puncture the foil). **Discard the remaining liquid in the pot**.
  7. Place in the upper rack of the oven and bake according to the following parameters:
  8. _**Top 230 °C, Bottom 230 °C, Fan Forced, 20 mins timer**_
  9. Remove the tray and pour the grease from the baking rack into a large bowl for later use (Do not puncture the foil).
  10. Flip all the drumsticks over.
  11. Place in the upper rack of the oven and bake according to the following parameters:
  12. _**Top 150 °C, Bottom 230 °C, Fan Forced, 20 mins timer**_
  13. Remove the tray and pour the grease from the baking rack into a large bowl for later use (Do not puncture the foil).
  14. Place in the upper rack of the oven and bake according to the following parameters:
  15. _**Top 60 °C, Bottom 60 °C, Fan Forced, 15-20 mins timer**_
  16. Remove the tray and pour the grease from the baking rack into a large bowl for later use (Do not puncture the foil).
  17. Take a small bowl, add the grease from the large bowl and the Soy Sauce Marinade at a volume ratio of **10:1 - 2:1**. The more marinade, the saltier it tastes; the exact amount depends on personal preference.
  18. Grab the root of the drumstick, dip it into the liquid in the small bowl. You can use a napkin or gloves to grip the grease. You can now enjoy the Orleans-style drumsticks directly from the aluminum foil.
  19. If the liquid in the small bowl runs out midway, repeat the previous step.
