Ingredients
- Pork ribs (Frozen meat section ribs are recommended)
- Yam (Recommended: Ironclad yam)
- Carrot
- Corn (Recommended: Sweet corn or waxy corn)
- Ginger
- Green onions
- Cooking wine
- Salt
- Casserole or deep soup pot
Steps
- **Ingredient Preparation**:
- Wash and peel the carrot, and cut it into roughly 3cm cubes (chunk pieces).
- Wash the corn and chop into roughly 4cm cylindrical pieces.
- Peel the yam (It is recommended to wear gloves to prevent allergic reactions from the sticky liquid), cut into roughly 4cm long segments, and set aside.
- **Blanch the Ribs**:
- Add ample cold water to the pot, then add the washed ribs.
- Add about 10g sliced ginger, an onion knot, and 15ml of cooking wine.
- Bring to a boil over high heat. After boiling, **wait for 3 minutes**, skimming off surface foams with a spoon during this time.
- Remove the ribs and rinse off impurities with approximately 40°C warm water, then drain and set aside.
- **Sauté the Ribs**:
- Heat the pan, pour in 10ml of cooking oil, and wait 10 seconds for the oil temperature to rise.
- Sauté the remaining about 10g of ginger slices until fragrant.
- Add all the prepared ribs. Sauté over medium heat for about 1 minute until the surface of the ribs is lightly caramelized.
- **Simmering**:
- Add 1500ml - 2000ml drinking water to the pot all at once.
- Add all the prepared carrots, corn, and yam.
- Bring to a boil over high heat, then reduce heat to low, cover with the lid, and **slowly simmer for 40 minutes**.
- **Seasoning and Serving**:
- Add 6g - 8g of salt, stirring evenly.
- Maintain low heat and continue **simmering for 2 minutes** to let the salt flavor absorb.
- Turn off the heat, sprinkle chopped green onions according to personal preference, and serve.
- **Tips**:
- Pork Ribs, Yam and Corn Soup is clear, sweet, and rich. The yam is soft and sticky, and the corn leaves a sweet aftertaste, blending the savory aroma of the ribs. This is a home-cooked soup suitable for all ages.
- It is rich in protein, dietary fiber, and various vitamins, and helps strengthen the spleen and stomach while boosting immunity.
- The method is simple, and the preparation and simmering steps are clear, making it easy even for beginners. The whole process takes about 1 hour to complete.
- Recipe Scales:
- Determine how many servings you want to make before cooking. One batch is exactly enough for 2 people.
- Per Batch:
- - Pork ribs: 500g
- - Yam: 1 piece (approx. 300g)
- - Carrot: 1 piece (approx. 150g)
- - Corn: 1 piece (approx. 250g)
- - Ginger (approx. 20g, slice for use)
- - Green onions (approx. 15g, knot or chop for use)
- - Cooking wine: 15ml
- - Cooking oil: 10ml
- - Drinking water: 1500ml - 2000ml
- - Salt: 6g - 8g
- - **Anti-Oxidation Tip**: If you do not put the peeled yam in the pot immediately, soak it in clear water to prevent it from turning black due to oxidation.
- - **Texture Control**: If you prefer the yam to be extremely soft, add it to the pot together with the ribs. If you prefer the yam to remain intact, add it to the pot after the ribs have been simmering for 20 minutes.
- - **Watering Tip**: If the water level drops below the ingredients during simmering, be sure to add hot water; adding cold water will cause the meat fibers to contract instantly, making the meat tough.
