- Shisanxiang (13-spice blend)
- Edible oil
- Warm water (about 40°C)
Steps
- Dough: Combine 300g flour, 3g yeast powder, 3g sugar, 180g warm water, and 20g oil. Let the dough rest for 10 minutes.
- Filling: Place 30g flour in a small bowl, add 2g salt and 4g Shisanxiang. Mix well with 20g oil, then set aside to rest.
- Shaping: Roll the dough into a rectangle. Spread the prepared filling inside. Roll up from one end to form a log. Cut into 7 equal pieces. Fold each piece in half, pinch the edges together with your thumb and index finger to seal. Apply water to the surface, then roll into small round pancakes.
- Frying: Preheat the electric grill. Pour in a small amount of cool oil (thoroughly coat the bottom of the pan). Place the prepared pancake in the electric grill. Brush a little oil over the top of the pancake, spread it evenly, then cover the lid. Select the 'Large Flatbread' setting. When you hear a ding sound, take the flatbread out.
Notes
Sesame Flatbread is a traditional Northern Chinese pastry. The surface is coated with sesame seeds and is crispy and fragrant, while the inner layers are distinct, soft, and palatable. Flour provides ample carbohydrates, while sesame seeds are rich in calcium and unsaturated fatty acids. Although the process involves kneading and making the filling, the operations are not complex, making it suitable for beginners. Preparation to serving takes about 40 minutes.
