- Cut the pork belly into large chunks that can fit in the pot first (approx. 5–6cm wide). Do not cut into cubes yet.
- Slice ginger (each slice approx. 3mm thick).
- Bring boiling water to a boil.
- Cold water is simply tap water.
- Cut the white parts of the scallions into small sections (small scallions are best, regular onions work too).
- Cut garlic cloves in half lengthwise; do not smash them flat, or they will be difficult to remove when reducing the sauce later and may affect the final taste.
- Divide the sub-ingredients into two 'prep packs':
- **Pack A (Deodorizing)**: 2 slices of ginger, 2 sections of scallion.
- **Pack B (Stewing)**: The remaining 4 slices of ginger, scallion whites, garlic cloves, Sichuan pepper, cloves, and sweet leaf. Keep this in a small bowl.
