Steps
- Clean the chicken liver and set aside.
- Clean the scallion sprouts, cut into sections, and set aside.
- Clean the scallion; take 100g of it and cut into sections. Take 50g and slice it; set aside.
- Clean the ginger; take 70g and slice it. Take 50g and cut it into cubes; set aside.
- Step 1: Blanching
- Place the cleaned chicken liver in a pot. Add cold water to submerge the liver, along with 100g of sectioned scallion, 70g of sliced ginger, and 30ml of cooking wine.
- Turn on high heat, then turn heat to medium after the water boils and skim off the foam. **Wait for 5-10 minutes**.
- Turn off heat, remove the liver, rinse with cold water to clean.
- Slice the chicken liver after cleaning and set aside.
- Step 2: Stir-frying
- Turn heat to medium. Add 30ml of cooking oil to the pot and wait 10 seconds for the oil to heat up.
- Add 50g of sliced scallion and 50g of ginger cubes and stir-fry to release the aroma.
- After sautéing, add the sliced chicken liver and stir-fry until slightly yellow.
