Steps

  1. Wash the green peppers and remove the stems and seeds. Slice them using the 'rolling-cut' (gun dao) technique and set aside.
  2. Smash the garlic cloves with a knife and cut them in half crosswise. Finely chop the ginger into a powder (ginger paste).
  3. Cut the lean pork into thin slices (cut parallel to the meat fibers; the slice pattern should resemble a 'Chuan' character).
  4. Wash the sliced pork and place it in a bowl. Add the calculated amount of light soy sauce, oyster sauce, and salt. Mix well and marinate for 10 minutes.
  5. Heat the pan dry (without oil). Put the sliced green peppers in and stir-fry on high heat until blistered/wrinkled, then add 2g of salt and stir-fry for another minute. Drain and set aside.
  6. Do not wash the pan. Heat on high, add * 8ml of oil, wait for 30s, then add the garlic halves and ginger powder. Stir-fry for 15s.
  7. Add the marinated pork slices to the pan and stir-fry for 2 minutes. Then add the previously blistered green peppers and stir-fry for 1 minute.
  8. Add black fermented soybeans according to personal preference, followed by soy sauce, and stir-fry for another 30 seconds.
  9. Remove from heat and serve.
