Steps

  1. ### Preparation
  2. Finely chop green onions (separate white and green parts), mash garlic cloves, and set them aside on a cutting board.
  3. Crack the egg and scoop some of the egg white into one bowl; put the rest into another bowl to reserve.
  4. Place mung bean sprouts in a pot and boil over high heat for 60 seconds. Drain the sprouts, rinse with cold water, and place them in a plate to reserve.
  5. Slice the cucumber into strips and put them in the plate to reserve along with the sprouts.
  6. Process the gluten (julienned wheat gluten) and place it in a separate plate.
