Ingredients

  • Thornback catfish or Sand light fish (1 piece)
  • Tofu
  • Scallions
  • Ginger
  • Cooking oil
  • Cooking rice wine
  • Edible salt
  • White pepper

Steps

  1. Clean and prepare the fish thoroughly (pay special attention to the blood clots inside the belly; if not cleaned well, it will have a fishy smell). Place it in a large bowl, pour in cooking rice wine, 10g sliced ginger, and 5g salt. Marinate for 15 minutes.
  2. Cut the tofu into pieces, soak them in cold water for 5 minutes, and remove them to set aside.
  3. Before pan-frying the fish, wipe the pot with a piece of raw ginger to prevent sticking. Add oil (amount: 15ml * number of fish pieces). After the oil is hot, place the fish in the pan and fry for 2-3 minutes. You need to shake the pan occasionally during this time to prevent the fish from sticking to the bottom, and you need to flip the fish over once.
  4. After the fish is fully fried, pour in boiling water, 5ml cooking rice wine, and ginger slices. Turn the heat from low to high. Cover with a lid and boil for 10 minutes over high heat (use a bit more water as some will evaporate later).
  5. Once the soup turns white, pour in the prepared tofu. Adjust the heat to medium and cook for another 5 minutes. Season with 10g salt and 3g white pepper. Finally, sprinkle with chopped scallions and serve.

Notes

The Thornback Catfish and Tofu Soup is a home-style dish with a fresh, tender texture and a thick, white soup. The fish has few bones and tender meat, while the tofu is silky smooth. Served with a touch of spicy warmth from the pepper, it is suitable for all age groups. The fish is rich in high-quality protein, and paired with tofu, it helps supplement calcium for a nutrient-balanced and easily digestible meal. The cooking process isn't complex; as long as you focus on removing the fishy smell and preventing sticking while frying, beginners can generally handle it.
