Steps

  1. Prepare the lemon: Cut the lemon in half (**knife direction perpendicular to the lemon's line from head to tail**) and set aside a slice from one half.
  2. Cut the remaining half in half again. Use the manual citrus press to extract the juice from the 4 quarters of lemon and set aside in a container.
  3. Assembly: Select a glass, preferably a 350~400ml transparent glass.
  4. Place 100g of ice cubes at the bottom of the glass.
  5. Pour 30~40ml of Gin.
  6. Pour 15ml of lemon juice (add more or the full amount if you prefer it more sour).
  7. Stir well with a spoon.
  8. Place the previously prepared lemon slice.
  9. Slowly pour tonic water along the glass wall until the glass is full (do not pour directly onto the ice to avoid losing bubbles).
  10. Gently upturn the spoon up and down to mix the liquid evenly (do not swirl to avoid losing bubbles).
  11. Place the green leaves for garnish on the liquid surface (optional).
