Ingredients
- Tomatoes
- Eggs
- Cooking oil
- Salt
- Sugar (optional)
- Scallions (optional)
Steps
- Wash the tomatoes.
- Optional: Remove the skin of the tomatoes.
- Blanch the tomatoes in boiling water, then place them in cold water to peel.
- Remove the tomato stem and cut it into small pieces with edges not exceeding 4cm. This is the 'tomato chunks'.
- Crack the eggs into a bowl, add `1g * number of portions` of salt, and whisk evenly. This is the 'egg liquid'.
- Consider adding 1ml of vinegar to the eggs. This removes fishiness and makes the eggs fluffier.
- Heat the pan and add the cooking oil.
- After the oil is hot, pour in the `egg liquid`. Stir-fry until the eggs solidify and turn slightly yellow. This is the 'semi-cooked eggs'.
- Turn off the heat. Transfer the `semi-cooked eggs` to a plate and turn the heat back on.
- Note: Do not wash the pan.
- Add the `tomato chunks`. Pound them with a spatula and stir-fry for 20 seconds, or until soft and mushy.
- Add the `semi-cooked eggs` back into the pot and stir-fry evenly.
- Consider adding 10ml of ketchup and 50ml of water to increase the sauce profile.
- You may add other cooked meats and ingredients.
- Add the remaining salt, sugar (optional, if you prefer a sweeter version), and scallions (optional). Stir-fry evenly.
- Turn off the heat and serve.
